This month, Le Cordon Bleu Chefs have prepared a stuffed courgette flowers recipe. Paired with oven-roasted tomato, this mouth-watering dish is worthy of any Provençal dish. Courgette flowers do not keep for a long time and for this reason, it should be used (eaten) rapidly, happily for us all.

Le Cordon Bleu Australia is excited to be a sponsor of the Shared Tables Thierry Marx Career Development Award.

The Shared Tables Thierry Marx Career Development Award is celebrating 10 years in 2016 and during the past 10 years has provided Victorian cookery students the opportunity to travel to Paris and work for 14 days under the guidance of Thierry Marx and his team in the kitchen of the Mandarin Oriental Hotel. Students will also be able to spend three days at the Le Cordon Bleu School in Paris along with four days travel and leisure. The Award seeks to encourage and reward students who are driven, motivated and passionate about their career.

Enormous career opportunities!

Recently, National Career Services Manager, Ben Mayne, was honored to be invited to sign a Memorandum of Understanding (MOU) between Le Cordon Bleu Australia and Intercontinental Hotel Adelaide (IHG) to recognise their partnership and involvement with the IHG Academy.  Representing IHG were Bruce Edwards, General Manager, and Michelle Dawson, Human Resources. This MOU will allow Le Cordon Bleu to be listed as an IHG Academy Partner and open enormous career development opportunities and potential for current and future Le Cordon Bleu students.

The Science of Good Eating

Le Cordon Bleu students come together to feast on food and culture.

Le Cordon Bleu Australia and Southern Cross University hosted this week the Le Cordon Bleu Master of Gastronomic Tourism residential program, attracting some 15 online students from both Australia and overseas to come together for a 3 day Residential to do what gastronomic tourists love best: socialising, learning about new destinations, and of course, enjoying eating and drinking experiences.

Taste of Le Cordon Bleu Adelaide

Wednesday 8th June guests were invited to spend an evening with our chefs, lecturers and culinary and hospitality management students, who showcased their skills and gave an insight into the Food, Wine and Gastronomy business that our students live every day!

The night consisted of freshly shucked oysters on arrival, with a glass of Pol Roger champagne. Followed by a cuisine demo of Cassoulet Toulousain by Chef John Collet and patisserie demo Lemon Diplomat by Chef Jenni Key. Our guests were also treated to a Champagne Masterclass by Trevor Maskell, where they learned the difference between a vintage and non-vintage champagne and the right and wrong way to open a champagne bottle.

Alumna Jacqui Newling

Eat Your History!

Jacqui Newling, Le Cordon Bleu Adelaide Master of Arts in Gastronomy graduate volunteered at the Sydney Living Museums before she took up a permanent position as a museum guide, and later resident gastronomer and curator of the Eat Your History projects. Jacqui's exploration of food history and heritage through food influenced her dissertation "Foodways Unfettered: Food in Early Colonial Sydney 1788-1795".
