This 6-week programme, taught by experts from Asia, introduces you to traditional Korean foods and preparation techniques, from historical elaborate royal court cuisine, to regional specialities and modern fusion cuisine.

Students also have the possibility of registering for the six-month programme, combining training in four Asian cuisines (Korean, Chinese, Japanese, and Thai), at a preferential rate. Click on the link at the bottom of this page for further information.

Prerequisites

  • All applicants must be aged 18 years or older.
  • The programmes are open to beginners, Experience or practical knowledge is not required.
  • Applicants must possess a baccalaureate or equivalent.

Intake: January 2021

Teaching method: Practical and theorical classes. All practical classes are taught in specially equiped Asian practical kitchens and conducted by a Chef Instructor in hands-on workshops. Practical and written exams.

Languages: Classes are taught in English and translated into French (consecutive interpreting).

Diploma awarded: Students will be awarded a Korean cuisine certificate, issued by the Le Cordon Bleu International Foundation.

  • Course contents

    In the Basic Korean Cooking Class, students will learn about traditional Korean ingredients, cooking techniques and dishes.

    Their training will include the following themes:

    • Learn to prepare a typical table service
    • Know the traditional Korean recipes
    • Acquire skills in the use of knives (for vegetables, meats, poultry, seafood)
    • Understand and use basic cooking, fermentation and grilling techniques depending on the product
    • Knowing how to prepare basic soy stocks, soups and sauces and other Korean products
    • Knowing how to prepare "seasonings", kimchi and basic sauces
  • Duration and Tuition fees

    Duration of the program: 6 weeks

    Tuition fees: €6,000
    Tuition fees include application fees (€500), educational content, and activities.

    Student kit:
    Students not from one of Le Cordon Bleu culinary arts programs must plan an additional amount, not included in the tuition fees, including uniform and utensils.
