This month, Le Cordon Bleu Chefs have prepared a merlot cherry and almond cream tart recipe. Gentle poaching in Merlot and arranging the fruit on top of an almond cream base show off cherries beautifully.

Le Cordon Bleu Australia was delighted to celebrate Bastille Day at the beautiful Seppeltsfield Estate located in the world renowned Barossa wine region bringing French gourmands together for a day of indulgence in French cultural and culinary delights.

Le Cordon Bleu Adelaide showcased a number of cooking demonstrations for the culinary enthusiast along with Junior Sous Chef activities with a photo booth to capture their culinary moments! Live cooking demonstrations were well received with award winning Chef Derrick Casey preparing Salmon Mi-Ciut Sous Vide followed by Pâtissier Jenni Key demonstrating the intricacy of creating the famous French Croquembouche. The cooking theme continued as young petite chefs were invited to demonstrate their cupcake icing skills!

“Eat Crickets”

Le Cordon Bleu Master of Gastronomic Tourism - The Residential, held in Sydney, Le Cordon Bleu Australia recently provided fellow online students the opportunity to learn and visit successful food tourism businesses and the chance to meet fellow distance education students.

Jana Clifford’s talks of her experience, with an added excitement as she prepares to travel to Paris in October to attending the Hautes Études du Goût program to further extend her gastronomic journey.

I started my studies with Southern Cross University and Le Cordon Bleu in January 2015 following a lifelong passion for food and learning. If someone told me 18 months ago I would be going back to University to eat crickets I would have laughed, but following the 4-day Le Cordon Bleu Master of Gastronomic Tourism residential, not only can I say I’ve eaten them, I have ants in my pantry (by choice). The Residential allowed me the opportunity to experience some of the best food Sydney has to offer, much to the delight of my taste buds, while lectures from academic staff, former students and industry experts stimulated my mind. The group visited Vaucluse House and experienced a taste of 19th century life by preparing butter and lemon sherbet along with Master of Gastronomy graduate, Jacqui Newling sharing her experiences of food writing. We had our concepts of what is edible challenged by the Edible Bug Shop and blended our own gin at Archie Rose.

A busy time at Le Cordon Bleu Melbourne

Agent dinner & open day

Le Cordon Bleu Melbourne has been busy this month hosting a number of events to promote the school and showcase the Superior Stage students.

The school welcomed some of its top performing education agents and English Language partners to an elegant 4-course dinner designed and prepared by students from the Superior stage of their training. The meal was preceded by champagne cocktails with a spicy oyster shooter as an apéritif.

Alumnus Myles Carr

A graduate of the Le Cordon Bleu Adelaide class of ’07, Myles Carr is now Franchise Operations Manager - NSW for AccorHotels, looking after 26 hotels across the region.

He says his degree provided him with the foundation skills to feel confident to put up his hand up for the position.

"If someone had told me that eight years after graduating I would have worked in six or seven hotels, with each position different and better than the previous, I would never have believed them", says Myles Carr.
