Recipe of the month Heritage tomato, honey and mustard onion polenta tart This tart base uses polenta which keeps it very short with a crunchy texture. The use of marmite creates an intense savoury flavour which contrasts the sweet onion and heritage tomato topping. |

Thierry Marx Career Development Award finalists' announced In our June edition newsletter, the Shared Tables Thierry Marx Career Development Award was promoted, which provides Victorian cookery students with the opportunity to travel to and work in Paris for two weeks under the guidance of Thierry Marx and his kitchen team at the Mandarin Oriental hotel. The winner will also spend three days at Le Cordon Bleu in Paris and be able to enjoy some leisure time. As honoured sponsors, Le Cordon Bleu are proud to announce that the following student achieved third place, and also a number of students were finalists: 3rd PLACE: Tengku Ahmad Armand Azaro, studying Grand Diplôme concurrently in Melbourne. Commenced course in October 2015 and started his Industry Placement at Crown Casino in July 2016. |

Signing MOU with The Star Sydney Ben Mayne, National Manager Career Services met with Cathy Sinden, Recruitment Manager for The Star Sydney recently to sign a Memorandum of Understanding between Le Cordon Bleu Australia and The Star Sydney. This further solidifies the relationship between the two organisations and will help create a multitude of future career opportunities for Le Cordon Bleu graduates. Next stop for the Career Services team is a Shared Tables luncheon, hosted by Philippe Mouchel, at his new city based restaurant “Philippe”. As Le Cordon Bleu are Gold Sponsors of Shared Tables, Derrick Casey, Chief Operations Officer, together with Ben Mayne, enjoyed engaging with chef’s from Melbourne’s vibrant culinary scene. |

Annual Graduation and Gala Dinner Special guests and friends travel from far and wide to celebrate our graduating students. On Thursday, 25th August 2016, 420 guests arrived at the Adelaide Town Hall for Le Cordon Bleu’s night of nights. 94 students from both Adelaide and Sydney’s Bachelor degrees, and Adelaide’s Master’s degrees, graduated at the annual formal gala dinner. Upon arrival, guests were treated to exquisite music from local harpist and singer, Emma Harwood, and during the ceremony and dinner, the Amicus Strings quartet provided the entertainment. A big congratulations to all our graduation students! |

Alumna Olivia Mcfarlane South Australian Olivia McFarlane graduated in 2014 from Le Cordon Bleu Adelaide. She has already been recognised for excelling in her field, having been awarded Employee of the Year in the 2016 Awards of Excellence, Restaurant & Catering Industry Association, South Australia. The 22 year old will go on to compete in the nationals in Sydney later in the year. Olivia McFarlane was recently promoted from Team Leader in the Coal Cellar + Grill Restaurant at the Hilton Adelaide, to Catering Supervisor. Olivia says the Le Cordon Bleu degree has been instrumental to her success to date, and she draws on what she learnt from lecturers on a daily basis, especially dealing with staff. |
