Head Pâtisserie Chef, Andre Sandison and Le Cordon Bleu Graduate Justin Yu have joined Team Pastry Australia and will represent Australia next year at the Asian region qualifiers for the World pastry Cup in France 2013.

Dean Gibson who has been filling in as Team Captain will now move to a position on the competition jury as Australia’s representative judge while Andre Sandison will now lead the team as Australian Captain.

Gibson said “I have just returned from France where I judged the World Chocolate Masters. The standard is so high now, especially as the Asia Pacific countries like Australia are getting stronger and catching up to Europe, so we expect a very strong competition from the other Asian countries next year”.

With Justin continuing his training program, Andre now dedicates three days per week to honing his skills with support from Dammika Hatharasinghe who competed in the International Pastry grand Prix in Tokyo and is one of Australia’s best sugar artists.

Both Justin and Andre start time trails in January in the new purpose-built competition space located at Continental pâtisserie.

Team Manager and owner of Continental Pâtisserie, Jian Yao said, “we are now focussing all our effort on Singapore and so to give our team the best chance we have designed a specialised area that replicates the kitchen space at both the Asian and World Pastry Cups. With this much support Team Pastry Australia will be a force at next year’s competition.”

The team is supported by some of the best in the business with Dean Gibson and Jian Yao joined by Barry Jones (executive pastry chef of Star City Casino) as the team’s technical adviser for the pastry, dessert and entremets and Adrian Pagano and Dammika Hatharasinghe as training support.

Congratulations to both Andre and Justin and good luck to Team Pastry Australia in Singapore in 2012.
