SWEETNESS The Patisserie wins at Sydney Royal Show

Successful Graduate: Gena Karpf

Le Cordon Bleu 2007 graduate Gena Karpf started baking when she was 4 years old after receiving an Easy-Bake Oven for Christmas. She’s loved baking her whole life, however it was only 2006 that Gena began to take her hobby seriously. After careers in hairdressing, youth work and most recently a 9-year career in Marketing with IBM Asia Pacific, Gena decided to make her childhood dream of being a pastry chef come true. Her first step was to enrol in the Le Cordon Bleu Patisserie course.

Gena fondly recalls the days when she was studying at Le Cordon Bleu Sydney Culinary Arts Institute; she couldn’t wait to go to school to learn & practice new recipes everyday. Gena emphasizes the importance of being proactive and not being afraid of asking questions of her chef lecturers.

After completion of Certificate 3 in July 2007, Gena left IBM and became the proud owner of SWEETNESS The Patisserie. SWEETNESS was a home-based business until March 2009 when her beautiful store and kitchen opened in Epping, Sydney. SWEETNESS The Patisserie is an open plan kitchen where you can see Gena and her team – some of them Le Cordon Bleu students & graduates – busily making confectionery, biscuits, tarts and cakes. SWEETNESS The Patisserie’s specialty is handmade marshmallows, SWEET Mallows – beautiful, fresh, and luxurious in more than 20 flavours.

Over the past 18 months, SWEETNESS has proudly won 38 medals and 3 championship awards through the Sydney Royal Shows and the Mudgee Fine Food Awards. Most recently, in February 2010 SWEETNESS won 8 awards in the 2010 Sydney Royal Fine Food Bread, Cake and Pie Competition including a Championship Biscuit or Biscotti award for Florentines.
