Secrets of gin-making and visit of a craft distillery

On Wednesday 14th January, Diploma in Wine, Gastronomy and Management students visited the renowned London’s craft distillery: Sacred Spririts Company.

The micro-distillery first opened in 2009, when Ian Hart - his founder and the host for the day - decided to move on from his City headhunter career and open his very own gin distillery in the heart of Highgate in London.

Throughout the visit, Ian Hart introduced our students to his operation and told them about his story on how  he decided one day to leave his business life to make his own gin.

In more detail, the owner described how the spirits are made in his distillery. He explained that “Sacred Gin is unique craft gin made in London from twelve organically sourced botanicals that are macerated with the highest quality English grain spirit”. Students also learned that unlike a traditional distillery that uses copper pot stills, Sacred Gin is distilled at surprisingly low temperature (45 degrees Celcius) under a low pressure vacuum in glassware vessel.

This uncommon making-process as well as the quality of the ingredients used gives a distinctively lush, fresh character of the Gin.

Students had the opportunity to taste over 10 differents flavours from the most expected such as coriander seeds or orris roots to the most surprising: cumin, red Sechuan peppercorn…

“Visiting a working distillery was a very important part  of our programme in order to understand the process of making spirits as well as the priorities in running a small company in a business relationship with the on-trade and off-trade” commented Master Sommelier Matthieu Longuere. “Students also had the opportunity to meet with Ian Hart and it was great to see them interacting with so much passion.”

Diploma in Wine, Gastronomy and Management has been designed to provide students with the knowledge and skills to succeed in the wine and spirit industries at international level. Applications are now open.
