The intensive program follows the same curriculum as our regular three month basic cusine or pâtisserie course, but is designed to help students finish the course in 5 weeks instead of 11 weeks.There is no difference in cost or curriculum structure between the normal courses and the Intensive courses.

Course Description:

Basic Cuisine

You will be introduced to classic cuisine skills and techniques— knife handling and care, hygiene and sanitation, classic knife cuts, cooking methods, food preparation, mise en place, palate training, and commonly used French terms.

Basic Pâtisserie

An introduction to the essentials of creating fine French pastry with flour, butter, sugar, eggs —and panache! You will learn the classic techniques of applying and combining these ingredients into a rich diversity of pastries, traditional desserts, cakes – Saint Honoré, Black Forest and Tarte au citron and doughs—pâte able, pâte feuilletée, pâte à choux.
