Emil Minev hosts demonstration in London

With almost 25 years of culinary expertise in fine dining, Emil Minev is Executive Chef at Shangri-La Hotel, at The Shard, leading a brigade of 60.  Chef Minev oversees the hotel’s three unique wining and dining venues, including an artisan deli and patisserie on the ground floor, a signature restaurant and a lounge on level 35 that offers a sumptuous array of locally inspired dishes with an Asian touch using ingredients sourced from nearby markets, and a signature bar on level 52.

A native of Bulgaria, Chef Minev moved to London in 2002 to study at Le Cordon Bleu.  Fuelled by an appetite to succeed and develop his culinary skills, Chef Minev trained at some of the city’s best restaurants whilst his academic pursuit also sent him to the world-renowned Alain Ducasse Formation Center in Paris and three-Michelin-starred restaurant, el Bulli, in Barcelona.

Chef Minev captivated our audience with his modern culinary demonstration. While interacting with the students, he highlighted how much the foundations of classic cuisine learnt at Le Cordon Bleu London had been essentials in his careers.

He reminded students that whatever they decide to do in their life, what they are learning today in the school is key and they will keep using those cooking techniques throughout their career.

Chef Minev prepared two recipes using local ingredients as well as cutting-edge techniques

Hand Dived Highland Scallops, Heritage Carrots, Ginger, Mandarin, Yuzu          

 

“Rhug” Estate Organic Lamb Loin, Sake, Soy, Mushroom and Apple                     

Advanced cuisine techniques are taught at Le Cordon Bleu London in our Diplôme de Cuisine programme. Students also have the opportunity to learn modernist cuisine and pâtisserie techniques when enrolling for our Diploma in Culinary Management.

Guest chef demonstrations are held each term to allow our students to experience and learn a variety of culinary styles from the industry’s best chefs.
