Carol Armstrong, Grand Diplome graduate at Le Cordon Bleu London



“My name is Carol Armstrong and I graduated with the Grand Diplôme at Le Cordon Bleu London in December 2008.

I already miss my days at school. I made great friends and the environment at the school is really entertaining. As well as being great fun, I feel I have left with an extensive knowledge of French cooking techniques and now have a solid foundation, on which I can build my career as a chef.  Le Cordon Bleu taught me everything from techniques to theory or ingredients.

I also benefited from Le Cordon Bleu Work to Study programme and worked six months in the preparation kitchen. I think it was the best decision I ever made. I learnt so much in those months and also got to hear about the personal experiences of the chefs at the school! This gave me a valuable experience in “mise en place”, ordering ingredients and organising classes.

Having completed the course, I really feel that I am ready to learn what it is like to be a restaurant chef!

I wish to be a cuisine chef in the future, and one day a Head Chef. Although Cuisine was initially my real passion, I felt I needed a strong background in Pâtisserie too. I found the Pâtisserie side to the school incredible. I actually work now for Marcus Warring at the Berkeley, a 2 Michelin starred restaurant, as a commis chef chocolatiere. It is really hard work but I love it very much! If I became Head Chef one day, I could command the respect of the pastry chefs in my brigade with my training and my experience as a Pâtisserie chef.”
