Le Cordon Bleu Finger Foods Home Collection Cookbook

This easy to prepare recipe is taken from the Finger Foods cookbook within our Le Cordon Bleu Home Collection series. It's part of a five course tasting menu served at The Menu is in the Mural event which was co-hosted by Pierre Deux and Le Cordon Bleu at the Pierre Deux Dania Beach, Florida store.

The vibrant hues and lively patterns of the Pierre Deux wall coverings collection inspired the menu which was paired with Le Cordon Bleu mustards, appetizers, preserves and cookies.

Mini Brochettes

It is important to marinate the ingredients as this will bring more flavor to the brochettes and make sure that the meat is deliciously tender

Prep time: 25 minutes plus 1 hour marinating

Makes 20

(175 ml) ¾ cup of veal or chicken stock

2 cloves garlic, crushed

(10 ml) 2 teaspoons chopped fresh ginger root

(30 ml) 2 tablespoons of dark soy sauce

(10 ml) 2 teaspoons sesame oil

1 skinless, boneless chicken breast half, cut into ½ inch cubes

½ red bell pepper, cut into ½ inch cubes

2 scallions, sliced diagonally

(5 ml) 1 teaspoon cornstarch

Soak 20 short wooden skewers in water for 1 hour to prevent them from burning during cooking. Pour the stock into a saucepan and simmer until it has reduced by a third and is syrupy. In a bowl, combine the reduced stock with the garlic, ginger root, soy sauce and sesame oil. Leave to cool.
Thread alternating pieces of chicken, red and yellow pepper and scallion onto the skewers. Place the brochettes in a flat dish and season. Pour half the cooled marinade over the brochettes. Cover with plastic wrap and refrigerate for at least one hour.
To make the dipping sauce, heat the remaining marinade in a small saucepan, then mix the cornstarch with a little water and stir in until the sauce boils and thickens. Set aside and keep warm.
Preheat the broiler or barbeque. Drain the brochettes and cook for 3 minutes, turning, until the meat is cooked. Serve immediately with the dipping sauce.
