Joo-Hyun Nam, Pastry department, Bread&co

Pastry Diploma 2009

Joo-Hyun Nam graduated from the Pastry Diploma program in 2009. He majored in a field, securities finance which had nothing to do with cooking, but he worked at a cafe as a barista out of his love for coffee. During that time he decided to study in the pastry field which had been a dream since childhood. He made his dream a reality at Le Cordon Bleu-Sookmyung Academy. He successfully completed the pastry course in Le Cordon Bleu and after graduation, He started work at Cafe Wallpaper in Bundang. Presently He is working at the Bread& Co, which is a new bakery brand of Shilla bakery.

He wants to say to future students that they should concentrate hard in their class. There are of course many differences between class in school and the real industry, but practice-based education in Le Cordon Bleu and trivial habits such as writing notes have been very helpful to him at work. Working at a company is more systematic than at a personally-owned cafe, with tight schedules and keen competition among colleagues. He said students and alumni should build their self-esteem as they are part of Le Cordon Bleu. However He also emphasized being humble, and not conceited.
