              Ingredient Series:Azuki Beans (“An”)

              Tokyo
              “An” is the most important ingredient in wagashi. This class will introduce students to the varieties and characteristics of beans and the methods of making “An”. Hikoyuki Yamaguchi, one of the youngest leaders in the world of wagashi, is fifth-generation owner of Kuya in Ginza, founded in 1884. Established own French-inspired spin-off product line, "Sora-iro", as an extension of the Kuya brand.

              These classes are taught in lecture style
