              Become a leader in the restaurant business on an international scale

              The Restaurant Management Diploma has been developed to prepare future professionals and entrepreneurs for new trends and technological innovations in the world of gastronomy. It is a thorough and intensive programme that allows students to become leaders in the restaurant world, on an international level.

              Duration: 1 year - 6 months of classes and 6 months of internships
              Price: 15 900 € (Full tuition includes registration fees, student uniform and visits)
              Hours per week: 20 hours
              Entry requirements: Applicants must have a very good level of written and spoken English, the language of instruction. They must also be at least 18 years of age and hold the equivalent of: High School Diploma (USA and CAD) – High School Certificate (Japan) – GCSEs (UK) – Baccalaureate (France) or other.

              • Restaurant Management Programme structure
                This Restaurant Management Programme gives students all the skills necessary to develop their restaurant business and make it a success. The Restaurant Management Programme is divided into two parts: 6 months of classes and 6 months of internship. This programme gives students:
                • A global and thorough understanding of restaurant management and restaurant industry
                • Fundamental management skills needed to make a restaurant business successful
                • An insight into new trends and technological innovations in the restaurant industry
                • Hands on training to develop real leadership skills
              • Course content
                The Restaurant Management Programme is divided into 4 modules:

                  Restaurant Management and Finance courses:

                  in this module, students will learn the fundamentals of accounting, analyzing profitability, and managing human resources within the restaurant industry.
                  Classes: food and beverage management - Financial management - Human resources - Introduction to business law - Company strategy - Business plan

                  Setting Up and Running a Restaurant courses:

                  in this module, students learn the fundamentals of running a restaurant, from kitchen organization to menu conception.
                  Classes: restaurant organization : operating sales points and invoicing - Creating a restaurant menu - Hygiene and safety - Raw materials: from the producer to the plate - Monitoring the quality and productivity of a restaurant

                  Marketing and Communication courses:

                  in this module, students evaluate the importance of marketing in the restaurant industry.
                  Classes: marketing and sales strategies - Trends and target markets in the restaurant industry - Communication in the restaurant industry.

                  Cuisine, Wine and Service courses:

                  in this module, students develop dining room management skills and gain knowledge in kitchen operations.
                  Classes: cuisine and pastry techniques - Introduction to oenology - Introduction to dining room service - Food and wine pairing - Restaurant service (practical skills)
