Perfecting skills in cuisine

The continuing education program in cuisine is ideal for those looking to discover new products, textures and technologies and to reinforce their skills. Le Cordon Bleu chefs have researched and tailor-made each module and are committed to passing on their professional knowledge. Recipes are demonstrated and then recreated in our professional workshops, using cutting edge techniques and following international tendencies.

Three cuisine modules are proposed:

International Influences - 4 days

Follow the trends of international cuisine creating recipes using exotic produce. Advice is given on these specialist ingredients, how to store them, buy them, use them, and how these unique flavors have influenced French cookery.

Session 1: April 27-30, 2010

Session 2: September 14-17, 2010

Natural and Light Cuisine Techniques - 4 days

Learn how to cook ingredients as naturally as possible, without loosing their aesthetic gastronomic value. Create imaginative recipes, which taste good out of light ingredients for healthy eating.

Session 1: May 4-7, 2010

Session 2: September 21-24, 2010

Modern Star Cuisine
- 4 days

In this module, the emphasis is placed on selecting, conditioning, preparing and presenting fine food that is worthy of the coveted 'star'. New cooking technologies, and innovative flavors are used to enhance traditional dishes and create masterpieces.

Session 1: May 10-14, 2010

Session 2: September 28-October 1, 2010
