This passport will bring you through a tour of pastry foundations. It is the perfect introduction to the world of pastry, from short crust doughs to delectable creams - they are sweet destinations. The main ingredients in French pâtisserie are flour, butter, eggs and 'savoir-faire!' By learning their various combinations, properties and applications, you will learn how to make various types of pâtisserie. Learn classic techniques from world class authentic French Pastry Chefs that have earned some of the highest honours in the pastry profession. Practice and replicate recipes in professionally equipped kitchens designed with individual workspaces, including gas ovens and refrigerated granite countertops.

Observe, take notes, and ask questions as our Le Cordon Bleu world-renowned chefs prepare their special recipe with their master pastry techniques.

Follow the chef into one of our state-of-the art professional kitchens. Here, you can try your hand at creating the recipes with plenty of one-on-one guidance from the chef.
