Congratulations to Ambrose Chiang  Alumnus and graduate of the Bachelor of Business (International Restaurant Management) 2013 program and current student of the Sydney Wine Academy, who is a finalist in the Young Waiter category for this year’s 2014 Electrolux Appetite for Excellence competition.This program awards the Australian Young Chef, Young Restaurateur and Young Waiter of the Year and aims to inspire and nurture young hospitality talent who are at the forefront of their profession.

2015 Scholarships released for Australian Students
Hospitality Entrepreneurship Scholarships

Do you see yourself running a five star hotel, are you passionate about restaurant experiences and see yourself as a manager of a global establishment. Le Cordon Bleu’s 2015 Hospitality Entrepreneurship Scholarships have been released and are available to Australian school students and school leavers who are interested in and passionate about an international career in hospitality and business.

Eight scholarships of $30,000 tuition each have been released to encourage students who are interested in a career in Hospitality and business to study at Le Cordon Bleu Australia. With campuses in both Adelaide and Sydney these scholarships are open to students nationally who are Australian citizens.

 
Matthieu Longuere MS wins Tasting Blind Club 2013-14
Master Sommelier and Le Cordon Bleu London Wine Development Manager 

The 2013-14 series finale was held on 16th June 2014, revealing Matthieu Longuere as the top taster of the series. Over the last few months Master Sommelier Longuere as well as members of the UK wine trade, from across all channels have been testing their knowledge of Australian wines through a series of blind tastings highlighting the diversity of the country's wines.

Recognised as a very strong figure in the UK wine trade, Matthieu Longuere has been working across leading restaurants in the UK for the last 20 years. He commented on his win "It was interesting to taste wine in a different context because I would have tasted some regions or some producers where you know what to expect, but not in a blind tasting." he says.

"There's been a huge difference between the regions as well as stylistic differences from one producer to another. I was used to blind tasting, but not so much about specific Australian regions and now this will help me to communicate more about Australia to my students at Le Cordon Bleu."

Olive oil cake, lemon curd and blueberry compote
Cake à l'huile d'olive, crème citron et compote de myrtilles

The use of olive oil makes a tender cake which retains its moisture as the oil coats the flour proteins, which reduces gluten formation and keeps the crumb extra tender. This is a citrus version paired with lemon curd and blueberry compote making a light and fruity plated dessert.

Making French meringue
Technique

Meringue, a classic recipe in French pastry, is made with stiffly beaten egg whites and sugar. There are three types of meringue: French meringue, Italian meringue and Swiss meringue, and all three have different uses: petits-fours, parfaits, iced soufflés, dacquoises, tart or cake toppings or simply for dessert decoration.
