International Restaurant Management students get hands on with industry

As part of the Bachelor of Business in International Restaurant Management, Le Cordon Bleu has introduced an exciting new element to the course in the form of educational industry workshops.

During a two day workshop, students visit four hospitality related businesses, with the opportunity to talk to business owners, operators and associated stakeholders about their experiences in setting up and running their establishments. Students are able to take the information they gather and critically analyse the operations of the businesses they visit, based on the theory they learn in their tutorial sessions on creative thinking techniques and innovation.

Agent visit to Adelaide campus gives a great insight into programs

The Adelaide campus played host to a select group of international education agents recently, giving them a special tour of our facilities, as well as a delicious lunch.  It was a great chance to show an insight into what Le Cordon Bleu Australia can offer students around the world. We look forward to welcoming many more students as a result!

 
Master of Wine for Le Cordon Bleu’s own
Wine Fundamentals lecturer honoured with Master of Wine qualification

Alison Eisermann Ctercteko, wine fundamentals lecturer at Le Cordon Bleu Sydney has been named Australia’s 19th Master of Wine. Alison began her career in the wine industry 18 years ago whilst working as an agriculture educator. Alison established and managed the 110ha Monument vineyard in Central New South Wales and later produced wines in their boutique winery for six years.

She has been a Panel Chair at the International Wine Challenge (IWC) for the past six years, and lectures at Le Cordon Bleu, the Sydney Wine Academy, and at the Asia Wine Service and Education Centre (AWSEC) in Hong Kong. The title of Alison’s successful dissertation was, “Monitoring the incidence and nature of screwcap closure damage, its effect on aromatic wine quality and the implications for storage and handling: an investigation of Sauvignon Blanc”.

 
A big crowd for Sydney Graduation
Sydney students celebrate the end of their studies

It was a graduating class of over 1oo students for this month’s Sydney Culinary Arts Graduation event. The night was full of excitement for students finishing up their studies. Industry guest Carl Middleton, Executive Chef for the Hilton in Sydney, had some great words of encouragement for students. Speaking about his early days in the industry, Middleton reiterated the need to work hard to receive rewards.

One of the highlights of the night came from Superior Cuisine graduate Nicolas Diez Vidal, who won the Hans Schings award for representing Le Cordon Bleu to the highest standard during his six month industry placement. He received a $2000 Scholarship towards the Le Cordon Bleu Advanced Diploma of Hospitality, a Le Cordon Bleu gift and trophy, and his name was engraved on the Hans Schings Memorial Shield that is on display at Le Cordon Bleu Sydney Culinary Arts Institute.

Biggest Morning Tea raises funds for cancer
Cake and biscuits bring in much needed funds for Cancer Council

Le Cordon Bleu staff happily sacrificed their time and money for the annual Cancer Council Biggest Morning Tea fundraiser. With handmade cakes, biscuits and treats, staff members enjoyed a lovely morning tea (and afternoon tea as there was so much food) to raise much needed funds for the Cancer Council, so thank you to all who got involved on the day!

New student Hélène Maingueux to compete at Mondial des Arts Sucrés

Le Cordon Bleu Paris are excited to announce that one of their graduate students, Hélène Maingueux, Diplôme de Pâtisserie (December 2012) was selected to represent France for the Mondial des Arts Sucrés competition that will take place in March 2014.

The Mondial des Arts Sucrés is an international confectionery art competition that is becoming increasingly important on the international pastry scene. Within the space of eight hours competitors produce a chocolate art creation, a sugar showpiece, two chocolate entremets, assorted chocolate bonbons and five plated desserts.

New online video competition in Taiwan is letting students show their passion

Aspiring Le Cordon Bleu students in Taiwan are proving their cooking skills by impressing judges with a self-made video. With more than 40 videos uploaded, the competition, that ends today, is now looking to the general public to vote on the entered videos to proclaim a winner. So if you would like to choose which video you think should win, please cast your vote!
