Innovative Australian wine competition

Le Cordon Bleu Australia is once again a main sponsor of The Adelaide Review Hot 100 South Australian Wines. Now in its 7th year, this innovative competition which sees both novice and experienced winemakers compete against each other, will select South Australia's most drinkable wine. This exciting competition has over 1200 entries which are then blind tasted by an esteemed judging panel who select a final ten finalists. From this group a winner is then selected and crowned South Australia’s most drinkable wine for 2013.

Maestros of chocolate go head to head
Sydney Chef Angelo Roche selected to compete in prestigious Chocolate Grand Prix

This year’s Foodservice Australia held from the 2nd-4th of June in Melbourne brought together five of Australia’s top chocolatiers with the challenge to turn molten chocolate into a spectacular centerpiece in nine hours at the Chocolate Grand Prix. Representing Le Cordon Bleu in the final of this challenge was Angelo Roche, Chef and teacher at Le Cordon Bleu Sydney.

Students and alumni win gold, silver & bronze at Dilmah Real High Tea Challenge
A "big achievement" for students against seasoned professionals

As the Dilmah Real High Tea challenge rolls around to each state in Australia we have five winners from three states to congratulate in June from Le Cordon Bleu. Le Cordon Bleu Adelaide students Gunawan Wu (Pâtisserie) & Wei (Bachelor Program) were awarded a Bronze medal in Adelaide's Dilmah Tea challenge, Son Sewoo won a silver medal in Perth with the highest score earning him top honours and pâtisserie chefs Joseph and Angelo Roche won gold in Sydney!

Camp Quality Dinner Hilton Adelaide 2013
Le Cordon Bleu volunteers

Gunawan Wu assisted Chef Simon Bryant at this year's Hilton Adelaide Camp Quality dinner, an event held to raise funds and awareness for the brilliant work that Camp Quality does for kids with cancer. Not only do students gain valuable experience working alongside such esteemed Chefs as Simon Bryant they also are great ambassadors for Le Cordon Bleu.

There are many opportunities to volunteer and if you’re a current student of Le Cordon Bleu and interested, then please ensure you have registered your interest with your campus lecturers.

 
New food and wine degree video release
Promoting food and wine entrepreneurship online

A new video produced by Le Cordon Bleu Adelaide and featuring Dr Roger Haden has just been released to promote the new Food and Wine Entrepreneurship courses. Entrepreneurship is where clever food production strikes a harmonious note with marketing, sales and ultimate business success. The Food Entrepreneurship degree is designed to provide essential skills and information for food purveyors and entrepreneurs, helping make informed decisions that lead to profitable outcomes. Whilst the wine Entrepreneurship degree recognises the differences between wine marketing and entrepreneurship, equipping students with a diverse and dynamic skill set.

Love blossoms at Le Cordon Bleu
From alumni to matrimony

In a little feel good story straight out of a romance novel, Le Cordon Bleu would like to send their congratulations to alumni Lachlan Clyne and Jocelyn Genevieve on their engagement. Both graduated from the Bachelor of Business programs in Adelaide, and as part of their engagement photographs included the Le Cordon Bleu kitchen where they first met!

 
Pâtisserie and Baking foundations cookbook winner
Western Australian junior sous chef wins new cookbook

To celebrate the release of the Le Cordon Bleu Pâtisserie and Baking Foundations cookbook set, GoHospitality and Le Cordon Bleu Australia ran a small competition online to win this beautifully shot technical manual and cookbook. The winner aptly was Huiru Boey a junior sous chef from Western Australia keen to increase her baking knowledge and culinary skills. These cookbooks are available to purchase and further details can be found by contacting Le Cordon Bleu Australia offices.

 
Amour et Pâtisserie
Comedy, romance and a little Pâtisserie with no name

A new 13 part television series Amour et Pâtisserie (The Pâtisserie with No Name) has been released to critical rave reviews in Taiwan. Introducing well know half French half Taiwanese actress Sandrine Pinna as Tian Tian a no-nonsense prickly pastry chef, the story follows her character as she returns from Paris to open a French Pâtisserie  in a small alley in Taiwan. The Pâtisserie has no name, no sign and no menus. She will only make three types of desserts per day depending on her mood and nobody knows her past or the secrets beneath her cold demeanour.

Wine Tasting Tip
The right wine glass will enrich the flavour of the wine, and keep it at the perfect temperature for drinking. When serving red wine, most wine experts will recommend a larger glass, while for whites which are meant to be chilled a narrower glass that reduces the heat escape from the wine is recommended.

Finally for Champagne’s and sparkling wines a narrow tall flute is preferred; this is designed to help the beverage retain its carbonation throughout its duration.
