MasterChef contestant Andre Ursini inspires recent graduates
Adelaide Graduation & Gala Dinner

The Le Cordon Bleu Graduation and Gala Dinner was held on 27th August 2011 at the Adelaide Convention Centre. Guest speaker for the evening was 2009 MasterChef finalist and Adelaide restaurateur, Andre Ursini. Andre owns and runs Andre's Cucina and Polenta Bar, a traditional Italian style bistro with a relaxed, shared dining atmosphere. Andre inspired our graduates as they embark upon their career with tales of his hospitality journey.  He encouraged graduates to innovate in their work practises and to take challenges as opportunities.

This year over 150 graduates from the Bachelors and Masters programs returned to Adelaide to celebrate the successful completion of their program with family and friends, industry guests and dignitaries.

Sweet Tastes for Indonesia
Culinary Graduate Stella Lowis opens online pâtisserie

Indonesian Stella Lowis is an Alumni of the Le Cordon Bleu Diplôme de Pâtisserie. Upon graduating Stella returned to her home town of Medan, North Sumatra to open online pâtisserie, La Maison Pâtisserie. Part time model/ part time baker, Stella creates beautiful hand-crafted cupcakes, special occasion cakes and macarons for her discerning clients.

Le Cordon Bleu Professional Excellence Awards Announced
Congratulations to Neil Perry, Justin and Georgia North

The 2012 Good Food Guide Awards were announced over the past week in both Melbourne and Sydney. The Good Food Guide is the bestselling premier restaurant review brand in Australia and Le Cordon Bleu is proud to be sponsor of these events through naming rights of the Professional Excellence category which honours those individuals who make a major contribution to the restaurant industry.

On Monday 29th August, The Age Good Food Guide Awards were held at the National Gallery in Melbourne with over 600 guests attending the Event. Neil Perry was announced as the recipient of the Professional Excellence award. Neil is a strong and long time supporter of Le Cordon Bleu, a connection maintained through our industry placement team in Sydney.

2011 Sydney Culinary Challenge

Le Cordon Bleu continues its winning streak at the 2011 Sydney Culinary Challenge with students and a teacher taking home gold, silver and bronze medals from the Competition.

The Sydney Culinary Challenge 2011 was presented by the Australian Culinary Federation New South Wales Chapter in conjunction with Fonterra, Diversified Exhibitions Australia, & Moffat Equipment within the Fine Foods & Hotel Australia Exhibition held at The Sydney Exhibition Centre, Darling Harbour from the 5th – 8th September.

Kiwis topple France on the field and the kitchen
The Le Cordon Bleu Culinary Challenge: New Zealand vs. France

Prior to New Zealand winning the match against France in the Rugby World Cup clash on the 24th September; New Zealand also beat France in a different kind of sporting battle.

The Le Cordon Bleu Culinary Challenge: New Zealand vs. France was held on the 22nd September at The Cloud on Auckland's waterfront where Al Brown and teammate, former All Black captain Tana Umaga faced Chef Phillipe Clergue, Chef de Cuisine of Le Cordon Bleu Paris, and former French captain Olivier Magne.

  • Mr Myles Carr will commence as the Revenue Manager at Novatel Manly, Sydney.
  • Mr Kedar Bhale is now the Housekeeping Manager at the Crowne Plaza Darwin.
  • Mr Ewdin Lee has recently started at the Marriott Shanghai as the Food and Beverage Manager.
  • Mr Harsh Vardhan Singh is currently at the Movenpick Hotel Dubai as a Senior Sales Manager.
  • Mr Timothy Lim is currently the Service Manager at Restaurant Andre, Singapore.
Recipe: Aïoli
The Provençal sauce par excellence

Aïoli is made from crushed garlic, olive oil and egg yolk. It is easy to make and adds a splash of sun to your recipes. Serve with crudités or seafood, or simply spread onto toasted bread, à la Provençal.

Le Cordon Bleu will feature at the forth-coming Good Food & Wine Show, Australia's premier food and wine event being held in Adelaide from Friday 7 October – Sunday 9 October.  Adelaide Showgrounds will play host over 300 food and wine exhibitors, as well as celebrity chefs including top television and restaurant chefs Ainsley Harriott, Manu Feildel, Matt Moran and Tobie Puttock.
