7th & 8th October

Chef Franck Poupard visiting from Le Cordon Bleu Paris conducted two Masterclasses on the 7th and 8th of October to an excited and appreciative audience. Both days were attended by a discerning group of foodies some of which had travelled 1,000s of kilometres to see Chef Poupard in action.

Sydney International Food Festival World Chefs Showcase
9th & 10th October

Over the weekend of the 9th & 10th October 35 international chefs demonstrated at Star City for the World's Chef Showcase. 30 Le Cordon Bleu students supported 10 staff from Star City back stage to prepare 600 tasting plates per session (12 sessions over 2 days). Organisers, the Executive Chef Andy North from Star City and the international chefs all congratulated our students on their professionalism, dedication and hard work.

Chef Franck Poupard oversaw the students backstage and networked with many of the International Chefs including Stephane Reynaud (France), Alexandre Gauthier, La Grenouillere (Northern France),  Janice Wong (Singapore and Le Cordon Bleu Alumni), Tetsuya Wakuda (Tetsuya's Sydney), Wylie Dufresne (WD-50 New York) and Peter Gilmore (Quay, Sydney).

Star City
New Student Placement Venue

As a result of our students participating in World Chefs Showcase event Star City signed up as a placement venue for our students. Currently the casino has 6 restaurants and banquet facilities for over 2,000 delegates. Next year Star City will undergo a $680 million refurbishment which will include 20 new restaurants.

Le Cordon Bleu Sydney Culinary Arts Graduation
14th October

The Culinary Arts Graduation Ceremony held on 14th of October acknowledged students successful completion of:

Le Cordon Bleu Diplôme Avançé de Gestion Culinaire (Advanced Diploma of Hospitality)

Students who have shown academic excellence were also acknowledged at this ceremony through the traditional Dux Awards and The Patrick Harris Award for the student who most improved in Basic, Intermediate and Superior Cuisine.

Chef Franck Poupard, from Le Cordon Bleu Paris, was the guest speaker on the night and spoke to the students about his time in Paris, his visit to Sydney and the Le Cordon Bleu worldwide family. Chef Poupard highlighted the vast opportunities that arise from being a Le Cordon Bleu graduates.

Le Cordon Bleu launches Culinary Arts Management Degree in Melbourne
With Victoria University

Le Cordon Bleu, Melbourne offers two undergraduate degrees in partnership with delivery partner – Victoria University

The programs offered are as follows:

  • Associate Degree in Culinary Management
    This two-year Associate Degree in Culinary Management offers a solid preparation for self-driven individuals to become an executive chef, kitchen manager or food service manager. Upon completion of this degree, students will acquire cooking and culinary skills, get experience in an operational kitchen on campus and work in a productive capacity.
  • Bachelor Degree in Culinary Management
    This course will give students the in-depth experience and knowledge to stretch their ambition to running their own hotel or restaurant and conduct business with equal confidence.

Work Integrated Learning

The Culinary Management programs contain a practical component of more than 500 hours of paid, industry work experience via the supervised "Work Integrated Learning" project. This real world experience gives students an advantage in a highly competitive graduate employment marketplace.

DUX Awardee
Carly Tippler

Le Cordon Bleu would like to congratulate Carly Tippler who achieved the highest overall grade in the Bachelor of Business - International Restaurant and Catering Management Degree 2010.

Carly said that "it was with great pride that I accepted the Dux award at graduation. This made all of the hard work worthwhile...Now that I have graduated; I look forward to putting my knowledge into practice."

Professional Experience Success
Hiu Ying (Jessica) HO

The Bachelor of Business (International Hotel Management) Degree has a practical component which enables students to put into practice their knowledge within the industry by working in a Hotel.

Congratulations to student Jessica Ho, who is currently working at the Crowne Plaza in Perth as a Guest Service Agent who has made a wonderful impression on the hotel. She has excelled at her job and been awarded Brand Champion, and has contributed to the hotel becoming smoke free for the last two months.

New Industry Placement Venue in Malaysia
Shangri-la Rasa Sayang Resort and Spa Penang

The beautiful Shangri-la Rasa Sayang Resort and Spa Penang, Malaysia, has signed on as an industry placement venue with Ben Mayne, Industry Placement Manager at Le Cordon Bleu. On his recent trip to Malaysia, Ben met with the resorts Director of Human Resources, Mr. JC Ramesh and Assistant Human Resources Manager Ms. Sara Choy to discuss having Le Cordon Bleu students conduct their Professional Experience placements with the Resort.

The HR Director offered placements in many departments of the hotel, including lucrative positions in Sales and Marketing, Human Resources, Finance, Rooms Division and Food and Beverage and not just for Malaysian nationals but students from all nationalities!

Employee of the Month
Manh Hung Nguyen

Currently undertaking his Stage 4 Professional Placement at Cable Beach Club Resort & Spa in Broome, Western Australia, Hung was named the Food and Beverage employee of the month for September 2010. The award was presented to him by the Cable Beach's General Manager, Ron Sedon.

This recognition of his hard work and positive attitude has also been acknowledged by guests of Cable Beach, one of whom took the time during their holiday to write a thank you note praising Hung.

Congratulations Hung and keep up the good work.
