Students Display Exceptional Skill in Pâtisserie Exams
Pâtisserie Supérieure students prepare a breathtaking array of pastry creations

As part of the Pâtisserie Supérieure program final exams, each student is required to complete three recipes within 5 hours. Student exams are judged by Chef Instructors as well as guest judges from the culinary industry, who grade each entry on technique, organization, presentation, and taste.

4-Day Baking and Pastry Courses. Whether you are a professional or a home baker, these in-depth courses will bring you to the next level of skill and technique. This September, immerse yourself in the magical world of the French bakery and pastry shop and experience our hands-on culinary education.

Introduction to Viennoisserie: Discover the French culinary techniques as you make buttery croissants, chocolate sweet breads and brioche.

Boulangerie II: Take your bread making skills to the next level. Prerequisite: Boulangerie I or professional bakery experience.

Passport to Pastry I: This course will take you through the basic techniques from shortcrust doughs to delectable creams.

Boulangerie de Base. All the fundamentals of boulangerie excellence are offered in this unique specialized course offered only in Ottawa. Learn about bakery theory, yeast doughs, breakfast and specialty breads, as well as artisan breads.
