Le Cordon Bleu to open in Brazil in 2017

Le Cordon Bleu partners with the University of Fortaleza and Anima Educação to launch new undergraduate and postgraduate programs in gastronomy, hospitality, wine and management.

Le Cordon Bleu, the leading Global Network of Culinary Arts and Hospitality Management Institutes, is proud to announce the future opening of new institutes in the context of two joint ventures with Anima Educação (Sao Paulo, Santos, Bello Horizonte), and with the University of Fortaleza.

These partnerships focus on the development of undergraduate and postgraduate, technical and extension courses in gastronomy, hospitality, wine tourism and management. For example, the Belo Horizonte campus will deliver a range of Bachelors in Hospitality Management, Tourism Management and Gastronomy and Culinary Management, while Le Cordon Bleu Anima Instituto de Artes Culinárias de São Paulo, will be delivering a range of vocational culinary programs.

Having worked as part of The Fat Duck Group since 2011, Evan started as a Demi Chef De Partie within the founding team of 'Dinner by Heston Blumenthal', which opened to huge critical acclaim in the Mandarin Oriental Hyde Park in January 2011.

90 Le Cordon Bleu Melbourne students were given the opportunity to attend his masterclass on Wednesday, 9th November. What an absolute privilege and from all accounts, an invaluable experience!

Calling all Food and Photography enthusiasts!

Le Cordon Bleu Food Styling and Photography Workshop

Prominent Adelaide based food photographer, Josie Withers, ran a two day Food Styling and Photography workshop on the 18th and 19th November. Josie is an Australian editorial photographer, who has shot national and local campaigns for media agencies, publishers, food and beverage companies and hospitality groups, as well as international and national campaigns for Tourism Victoria and the South Australian Tourism Commission.

This hands-on food photography and styling workshop covered how to shoot with natural and available light, food photography techniques, image styling, and social media. Participants learnt how to use natural light in photography and styling, explored objects, surfaces, shape and form, light and shade, image composition, as well as editing and post production. The two day course also explored how to examine different photographic techniques and how to explore individual artistic approaches.

Blue Ribbon French Artisan Bread Making Workshop

Le Cordon Bleu presents hands-on artisan bread baking workshop

Held over 2 days, on the 10th and 11th November, Le Cordon Bleu Adelaide presented a Traditional Bread Baking Workshop which taught participants the secret techniques of French and European breads. The workshop was run by international award winner Paul Tiglau, currently ranked 6th in the world after competing at Mondial Du Pain in St Etienne, France, and winner of the prestigious SIGEP baking competition held in Remini, Italy.

Pascal Janvier, Cacao Barry Ambassador, Asia/Pacific region, leads Masterclass

80 students at Le Cordon Bleu Melbourne enjoyed the last of the master classes for 2016. The final master chef was Pascal Janvier, master in chocolate and pastry art. Pascal has won numerous awards and named one of the top 10 pastry chefs in America. His masterclasses are designed to educate students about the finer qualities of chocolate and its origin.

Alumni Ambrose Chiang

Congratulations to Ambrose Chiang Alumnus and graduate of the Bachelor of Business ( International Restaurant Management) program who is a finalist in the Gault & Millau 2016 Sommelier of the Year Award.

Ambrose is no stranger to such accolades, having been a finalist in the Young Waiter category for this year’s 2014 Electrolux Appetite for Excellence competition.

‘With my work - Like the chefs, restauranteurs and sommeliers that I look up to throughout the years of learning and working in the industry, I try my best to present a value structure that myself and my team believe in, using food, service and wine as language, to inspire people to reflect and think about how they could see something different in the world they live in.’ he says.
