Pan roasted cod, herb gnocchi, clams, parsley and garlic sauce

The cod is cured prior to pan frying which is a technique used to firm the flesh and it also brings out the flavor. In this dish the cod fillet plays center stage and is complemented by herby gnocchi, a classically made sauce, clams and samphire.

Bienvenue to Le Cordon Bleu Adelaide!

Over two days in January, Le Cordon Bleu treated our new students to a day out in the Adelaide Hills. Students and staff were able to interact in an informal setting, while exploring the stunning region of Adelaide.

Students were able to get close to Kangaroos, Koalas, and Emus to name but a few! Followed by a trip to Hahndorf, situated in the picturesque Adelaide Hills.

Le Cordon Bleu Sydney student wins Regional round!

Le Cordon Bleu Sydney Superior Patisserie student, Mary George, is the winner of the Regional round of the WorldSkills Australia Competition. Currently doing her Industry Placement with Adriano Zumbo, and mentored by our own Chef Andre Sandison, we wish her all the very best as she prepares to compete at the National Level of the Worldskills competition in Melbourne later this year.
