Technique: Prepare Sweet shortcrust pastry
Le Cordon Bleu shows you how to make sweet shortcrust pastry with a recipe that can be used for making any tart or tartlet.
This technique can be used to make any sweet shortcrust pastry recipe.
Sweet shortcrust pastry (for 1 x 20 cm diameter tart mold)
    200 g flour
    100 g cold butter, cut into pieces
    1 tbsp sugar
    1 egg
    1 pinch salt
    1 cuil. à soupe d'eau

Combine the sifted flour, sugar and salt in a bowl. Rub in the butter until the mixture resembles coarse breadcrumbs. Make a well in the center of the mixture and add the egg and water; roughly mix to combine.
Sweet shortcrust pastry
Form into a ball, flatten slightly and wrap in plastic film. Refrigerate for 30 minutes
