Technique: Making sweet pastry dough
Le Cordon Bleu shows you how to make sweet pastry dough with a recipe that can be used for making any tart or tartlet.
This technique can be used to make any sweet pastry dough recipe.
Sweet pastry dough
  • 120 g butter
  • 2 g salt
  • 75 g powdered sugar
  • 25 g ground almonds
  • ½ tsp vanilla sugar
  • 1 egg
  • 200 g flour

1. Soften the butter with the salt. 2. Add the powdered sugar, ground almonds and vanilla sugar. Mix well. 3. Pour in the egg, mixing quickly.

4. Add the flour and combine without kneading the dough. 5. Flatten the dough, wrap it in plastic film and place in the refrigerator for at least 30 minutes.
