Technique: Preparing Pasta dough
Learn how to make pasta dough so you can appreciate the flavor and quality of fresh pasta
Follow the ingredient list in the recipe to make this pasta dough.
  • Place the flour on the work surface and make a well in the center and add salt.
  • Beat the eggs and olive oil together. Pour the eggs into the well and, using your fingertips, gradually begin incorporating the flour. Use a dough cutter to help form the dough.
  • Add a little cold water at a time until the dough just begins to hold together.
  • Using the heel of your hand, begin kneading the dough, adding more water if needed. It should be a fairly hard, tight dough.
  • Continue kneading until the dough is smooth. It should not be sticky. If it is, add a little flour.
  • Wrap in cling film, refrigerate for 20 minutes.
