Head Chocolatier at KAKAWA

Le Cordon Bleu graduate opens KAKAWA chocolates in Sydney, much to the delight of food and chocolate lovers alike.

Jinsun KIM, the head chocolatier at KAKAWA opened the shop with her fiancé, David Ralph in the busy Darlinghurst area almost 5 months ago. In such a short time, Jinsun and her fiancé have already achieved success, featuring in newspaper articles twice and winning an award from the 2009 Melbourne Royal fine food.

In 2003, Jinsun graduated from the pâtisserie course at Le Cordon Bleu Sydney Culinary Arts Institute. She was called sunshine by the chefs because of her name. She still remembers her favourite moment of studying at Le Cordon Bleu which was the delicate chocolate work. A month of learning chocolate work brought her into a world she never imagined  and she almost received a  perfect score, so deep was her passion. Jinsun still remembers one of her  favourite Le Cordon Bleu patisserie chefs, Andre Sanderson with affection, becasue he was so kind, patient and explained everything well again and again, to this Korean girl who didn’t speak English well at that time.

Le Cordon Bleu wishes Jinsun all the best, and looks forward to sampling some of the fine work that our graduates produce.
