Hautes Etudes du Goût (HEG) programme presentation and demonstration
Le Cordon Bleu London hosted a presentation and demonstration on Thursday 12 July to introduce the Hautes Etudes du Goût (HEG) (Advanced Studies in Taste), a multi-discipline programme which encompasses the numerous facettes of gastronomy.
The advanced two-week programme explores the scientific, cultural, historical, sociological, legal and economic approach to taste through lectures, workshops and dinners.
HEG project director Edwige Sibille introduced the programme to a number of Le Cordon Bleu London students before Chef Philipe Clergue - Le Cordon Bleu Paris teaching chef – demonstrated the ‘Note by Note’ culinary concept in one of our state-of-the-art demonstration kitchens. Chef Clergue created ‘Note by Yolk, Reminiscent of Meurette’, and ‘Tomato Mozzarella Note by Note’ using essences and powdered food items to create complex and striking dishes.
The HEG programme represents Le Cordon Bleu’s involvement in advanced culinary concepts to offer our students a comprehensive and stimulating education.
‘Note by Note’ cuisine uses chemical compounds to recompose the form, consistency, aroma, colour and flavour of particular dishes. All traditional references to meat, fish, fruit and vegetables are forgotten. Revolutionary combinations are developed from ethanol, lactose, fructose, gluten, polyphenols, saccharose and so on, with the aim of imitating the desired dish in the most interesting manner.
The HEG programme represents Le Cordon Bleu’s involvement in advanced culinary concepts to offer our students a comprehensive and stimulating education.
Students are awarded the D.U.G.G.A.T (Diplôme Universitaire du Goût, de la Gastronomie et des Arts de la Table), an official diploma delivered by the Université de Reims Champagne-Ardenne. For students within the European Union, 60 ECTS (European Credit Transfer System) credits are associated with the D.U.G.G.A.T.
