Le Cordon Bleu Paris Graduation Ceremony – March 2015

The first 2015 session Le Cordon Bleu Paris graduation ceremony took place on March 20, 2015. The ceremony was held at the ‘Cercle de l’Union Interalliée’ with graduate’s family members and friends. On this special day, Le Cordon Bleu was honored to welcome Chef Claire Heitzler as class patron.

Claire Heitzler’s gourmet adventure began at the Thierry Mulhaupt pastry boutique where she learnt to combine precision, esthetics and flavors. She continued her comprehensive training by traveling the world and discovering its many different cultures.

Whilst at Beige Alain Ducasse in Tokyo, she took inspiration from the worlds of cosmetics and jewelry to develop exclusive desserts as part of a partnership with Chanel, which played with curves, shapes and the impact of shiny elements. Claire Heitzler continued to develop her international experience at the Park Hyatt in Dubai, where she was in charge of pastry and extended her range of flavor references.

She returned to traditional French pastry in Paris, in the legendary setting of the Ritz, before joining the pastry team at Lasserre in 2010.

Claire Heitzler has devoted herself to creating a new dessert menu where balance and pleasure co-exist in perfect harmony. Her desserts are exceptionally light, often built around a fruit, from which she creates delicate and innovative combinations.

This class was composed of 61 students, come from 26 countries. We are delighted to announce the top of the graduates, from each level of March 2015 session:
