Le Cordon Bleu London welcomed legendary Michelin-starred chef Alain Roux into our kitchens for a culinary demonstration exclusively for our students.
Chef Roux demonstrated the superb skills passed down from his father Michel and uncle Albert to an audience of approximately 100 students, as he created fillet of sole baked in puff pastry followed by chocolate macaroons with pistachio cream and raspberries.
Chef Roux was born into a family synonymous with fine cuisine – his father and uncle founded Michelin-starred restaurants Le Gavroche and The Waterside Inn. He has continued the tradition by honing his skills in several prestigious kitchens before becoming Chef-Patron of the three Michelin-starred The Waterside Inn in 2000.
Le Cordon Bleu London Chef Instructor Eric Bediat worked alongside Chef Roux at The Waterside Inn for seven years, and he continues to pass on the knowledge gained during this time to students of our Grand Diplôme and Cuisine Diploma.
Guest chef demonstrations are held each term to allow our students to experience and learn a variety of culinary styles from the industry’s best chefs.
