Gâteau Maman - Warm Chocolate Cake

Ingredients

195 g / 7 oz dark chocolate (70%)
150 g / 5 oz butter
6 eggs
300 g / 10 oz sugar
95 g / 3.5 oz flour, sifted
1 tablespoon coffee extract

Method

  1. Preheat the oven to 160°C / 375°F. Butter an ovenproof 2.5L dish.
  2. Coarsely chop the chocolate and melt with the butter in a hot-water bath. Once melted, remove from the heat and stir in the coffee extract.
  3. Separate 3 eggs. In a medium mixing bowl, whisk the egg yolks with the remaining three eggs along with 250g of the sugar. Whisk until thick and foamy. In a separate bowl, beat the egg whites to soft peaks. Whisk in the remaining sugar until glossy.
  4. Gently fold the melted chocolate and butter into the egg yolks, then fold in the egg whites. Before the egg whites are completely incorporated, fold in the sifted flour. Pour immediately into the buttered dish. Place the dish in a baking pan, and fill with hot water, about halfway up its side. Bake 30-35 minutes until the sides are set, but the center still jiggles. Remove from the oven. Allow to rest 5 minutes before removing from the baking pan. Serve while still warm.
    1. Chef's tip: if coffee extract is unavailable, it can be replaced by 1 teaspoon of instant coffee dissolved in a tablespoons of hot water.
