The Classic Cycle Le Grand Diplôme and culinary diploma programs provide the most intensive and comprehensive training in classic French cooking and pastry techniques. These methods can be applied to any style of cuisine. Aspiring chefs and non professionals learn the foundations of cooking through demonstration and hands on practical training. As students advance through basic, intermediate and superior levels, they gain the knowledge, discipline and understanding of technical skills that encourage their creativity and natural talent to blossom.
For those who want to specialize in cooking techniques, the Diplôme de Cuisine begins with basic knife skills and cooking methods. Students build upon techniques in each class and as they advance through plate presentation to refined techniques, timing and menu and recipe development.
The Diplôme de Pâtisserie starts with basic doughs and decoration leading to chocolate tempering and molding, artistic decorative techniques and finally sugar work and chocolate show pieces.
The Grand Diplôme Le Cordon Bleu, Diplôme de Cuisine, or Diplôme de Pâtisserie is awarded upon successful completion of the program path followed.
