COURSE DESCRIPTION

Le Cordon Cuisine and Pâtisserie Classic Cycle certificate courses are especially well suited for beginners exploring the culinary arts, professionals or those with limited schedules. Through demonstration classes, tastings and hands on training, students develop skills that build confidence and artistic expression. There are 3 levels offered:

  • Basic level cuisine and pastry technique courses introduce classic cooking and pastry methods upon which to build a repertoire of skills or to strengthen existing skills.
  • Intermediate level cuisine and pastry courses focus on refining techniques, advanced cooking and pastry methods, “mise en place”, organization, decoration and presentation.
  • Superior level cuisine and pasty courses encourage creativity through menu and recipe development, sugar work and advanced chocolate work.

Certificate courses are components within the Le Cordon Bleu culinary diploma programs. Upon successful completion of Basic, Intermediate and Superior levels, a diploma is awarded according to cuisine and/or pastry path followed.
