Ottawa Campus: An Additional Grand Diplome Professionnel Class is opened

Le Grand Diplome Professionnel is a ten - months integrated program designed for today’s aspiring chefs looking for comprehensive training to fast track their career in the culinary arts. Through four levels of study, students develop their technical skills moving from basic to more advanced techniques in cuisine and pastry, while earning important industry certifications such as Smart Serve Certifications, gaining 3 months of real-life work experience and learning about latest culinary trends and theory.

Industry Practicum

Le Grand Diplôme Professionnel, available exclusively in Ottawa, includes an industry practicum. In the three month industry practicum, students put their culinary training to the test by working in the acclaimed Le Cordon Bleu Bistro @ Signatures restaurant in Ottawa or another quality restaurant establishment worldwide that meets the career interests of the student.
Students will work:

  • 10 weeks in the kitchen performing the functions of each part of the kitchen brigade with 6 weeks in cuisine and 4 weeks in pâtisserie
  • 1 week at the front of the restaurant: taking orders, serving food and handling billing

During the practicum, students are guided and mentored by professional chefs. They receive weekly feedback from the chefs to further emphasize the skills and techniques learned in Le Grand Diplôme Professionnel program.
