Meilleur Jeune Commis Rôtisseur

Paris, September 20th 2008: Tobias Günther, young German commis of 25 years old working at the Fairmont Hotel Vier Jahreszeiten in Hamburg, is the 2008 winner of the competition «Meilleur Jeune Commis Rôtisseur» of the Chaîne des Rôtisseurs. The competition took place on September 19 at Le Cordon Bleu Paris. The awards were announced at the Cercle de l’Union Interalliée on Saturday September 20 during the closing ceremony of this year’s events.

Second place was awarded to Michael Dekker from Canada and the third to Daniel Schilcher from Austria. Based on a black box or secret basket where all the ingredients and materials available during the competition are listed, the competitors must submit three recipes: first course, main dish and dessert. They must meet a specific time frame to present four identical plates for each dish.

The menu prepared by Tobias Günther was as follows:

Sauteed Red Mullet on a bed of Peppers, Olives with Tomato Confit and Vermouth Foam

Stuffed Duck Breast, Spinach, Ginger Carrot Purée with Basil Gnocchi Chocolate

Parfait with Pineapple and Raspberry

The jury grades the level of creativity, punctuality in delivering the dishes, menu, presentation, quality, taste and techniques used. The grade also merits organizational skills and cleanliness of the competitor’s work.

The winner received a training scholarship to Le Cordon Bleu, the Arthur Bolli Trophy, prizes from the Chaîne, Wüsthof - famous knife manufacturer and partner of Le Cordon Bleu – as well as from Bragard and Canadian Chefs-Hats ®.

The Chaîne des Rôtisseurs, a worldwide gastronomic association founded in Paris in 1950, finds its origins in 1248 under the reign of Saint-Louis when the professional corporation des Ayeurs began as a royal guild of geese roasters. The Chaîne des Rôtisseurs encourages the training of young chefs through the Jeunes Commis Rôtisseurs competitions. These events offer young talents the opportunity of demonstrating their skills. The 25 000 amateurs and professional members spread widely throughout 70 countries. The Chaîne des Rôtisseurs continues to develop and expand.

Le Cordon Bleu was founded in Paris in 1895 and today is present in 15 countries with 30 schools bringing together each year 20.000 students from more than 70 nationalities.
