The London final of this prestigious competition, organised by the international gastronomic society Association Culinaire Française, was held on Saturday 6th June 2009 at the West London Hammersmith College. The contestants, 6 culinary students and 8 chefs, competed for the title of London winner under the scrutiny of a very high-profile panel of 8 judges, most of them Michelin-starred.
All the contestants were given an identical, previously undisclosed, ‘market basket’ containing five ingredients. Using these ingredients, plus a variety of staple ingredients from the pantry, contestants had three hours and twenty minutes to compose and execute a three-course menu for two covers. The dishes were then judged on the taste, the presentation and the originality of the dishes presented by the team of judges.
Our student, Ivo Galvao, the winner of this competition, amazed the judges with his gastronomic menu: Pan Fried Honey Scallops, Five Spices Aubergine, Roasted Almonds, Crispy Leeks and Ginger Sauce Stuffed Breast of Quail, Broad Beans, Baby Courgettes, Stuffed Tomato, Pommes Cristal, Jerusalem Artichoke Puree and Sweet & Sour Sauce Valrhona Dark Chocolate Tartlet, White Chocolate Mousse and Rhubarb Sauce
He will now represent London at the British heat of the competition on the 14th of October! He will compete against other winners of local competitions in cities across England to win the title of Britain's Young Talent 2010.
