Chul-Hee Lee, Main Chef, Rose Bakery

Cuisine Diploma 2009

Chul-Hee Lee graduated from the Cuisine Diploma program in 2009. He majored in civil engineering, but he changed his career as he became interested in cooking. He entered Le Cordon Bleu-Sookmyung Academy because of his friend's recommendation. He was worried at the beginning with his lack of his experience. However he was inspired and stimulated to put his best efforts into every moment by his older classmates who had come to the academy with clear purposes. Till this day he vividly remembers the recipes from his first day in Le Cordon Bleu. He was very satisfied with the contents of the whole course including the introduction of each history of dishes, the way to prepare ingredients and various recipes which are still very helpful to him at work.

After graduation, he did an internship in Grand Hyatt Seoul. Presently he is working at Rose Bakery as the main chef, in charge of all operating functions of the company including communication with workers, managing ingredients and price. At Rose Bakery, the menu is updated through continuous exchange with the head shop in France. The most appealing task is to redevelop new menus using Korean ingredients for Korean taste buds. His motto is “Live deliciously!” He wants to say to future students “Don not think cooking is work.” He said, students always need to remember their original intention when they began cooking. His lifelong dream is to open a restaurant with his name. He is now closer to achieving that dream.
