Yoon-Ji Nam, Pastry department, Eric Kayser

Pastry Diploma 2010

Yoon-Ji Nam graduated from the Pastry Diploma program in 2010. She worked in the financial sector for several years after graduating from high school, but quit her job as it did not suit her. She started studying to apply to the department of Japanese at universities. During that time she felt interested in home baking as a hobby and decided to study in the pastry field. She was accepted by a university with a relevant major through nonscheduled admission. However she thought the Le Cordon Bleu program with few students and practice-based education was more efficient than any college program and she chose the Le Cordon Bleu-Sookmyung Academy. She was able to build up her academic and practical foundation in baking through the alternate demonstration and practical lessons. The chef’s comments in every practical lesson of Le Cordon Bleu were especially very helpful to her to look back at her steps and change wrong working methods.

She attended a new product showing for Le Cordon Bleu students by Eric Kayser. That served as an opportunity for her to apply to Eric Kayser, as she thought she could practically apply her knowledge and skills in French pastry there. Presently, she is working at Eric Kayser. Her ultimate aim is to open her own dessert shop with four seasons as the theme. She is dreaming of creating a space where people can feel and taste the seasons through her desserts made with ingredients in season. Lastly, she advises future students that they should not forget their original intention and be always faithful to the basics. She also emphasized that it is important to build self-esteem but they should also be humble.
