Chef demonstration

From 13th to16th June 2009, Le Cordon Bleu successfully hosted Master Chef Cooking Demonstrations at KOTO International in Hanoi. KOTO, a non-profit organisation for underprivileged youngsters, grew in just 10 years from a sandwich shop in Hanoi to a 120-seat restaurant with an internationally-accredited hospitality program.

Le Cordon Bleu's Michelin Star Chef Frederic Lesourd (Le Cordon Bleu Paris) and Chef Fabrice Danniel (Le Cordon Bleu Dusit) performed Cuisine and Patisserie demonstrations and conducted training sessions. Trainees then had the opportunity to make a number of dishes before enjoying a delicious and very international buffet.

Dishes available included salade de lentilles de Puy, noix de St Jacques saisies and risotto a la saveur de noisettes et truffes. The dessert demonstrations were just as exotic and featured tarte chocolat framboises, panna cotta, financier citron and fraises et creme Chantilly.

KOTO were especially appreciative that Le Cordon Bleu hosted such a world-class demonstration with two high-profile chefs. Trainees received certificates of attendance as well as an Le Cordon Bleu gift pack. A press conference also included the announcement of an Le Cordon Bleu Scholarship winner. The event was covered by three national television stations in Vietnam, and trainees and Le Cordon Bleu staff were interviewed by the Saigon Times newspaper as well as Culture Magazine.
