Chef Miguel Quezada winner of the “Trophée Passion” competition of the Académie Culinaire de France
Chef Miguel Quezada, executive Chef from “Le Cordon Bleu Casa de Francia” restaurant in Mexico City was the winner of the seventh Trophée Passion competition on October 8, 2012.
This renowned competition was originally developed by Gerard Dupont, and this year was chaired by Thierry Marx, Head Chef of the Mandarin Oriental.
Nine finalists Chefs from around the world took part of the contest:
  • Ireland: Seamus Commons - Knockranny House Hotel & Spa
  • Australia: Paul Tyas - Middle Brighton Baths - Victoria
  • Japan: Hiromitsu Ebina - Imperial Hotel - Tokyo
  • Mexico: Miguel Quezada - Le Cordon Bleu - Mexico City
  • Ecuador: Rodrigo Pacheco - Kitchen Standard - Quito
  • Peru: Giacomo Bocchio - Restaurant Manifiesto - Lima
  • U.S.: Jeffrey Lizotte - Restaurant Onzo - Hartford
  • Switzerland: Christoph Hunkizer - Restaurant Schärmehof - Thun
  • France: Claude Calvet - Hotel du Palais - Biarritz
The preparation criteria were:
  • Saddle of lamb for 6 people served with 3 garnishes which must include banana and carrot in the preparation or a garnish.
  • Dessert made with pineapple for 6 people that must include chocolate and beetroot.
The Chefs had to complete two dishes in five hours. The Chefs were strongly encouraged to use products and spices from their home country.
Chef Miguel Quezada became Executive Chef of Le Cordon Bleu Casa de Francia in 2004. This restaurant gives scholarship students the opportunity to learn to run a restaurant through practical experience. Under his supervision the restaurant has been awarded the Five Star Diamond Award from the American Academy of Hospitality Sciences.
