Culinary Festival of Ljubljana
Le Cordon Bleu is one of the partners for the 4th Culinary Festival of Ljubljana organized by Mr Rado Stojanovic (Radost - Poslovno svetovanje).
This will be the first time that Le Cordon Bleu International will be present in Slovenia, a country which presents a real culinary dynamism.
On November 17 and 18, during the festival, and in the form of organized culinary demonstrations, Chef Philippe Clergue, Chef instructor at Le Cordon Bleu Paris and finalist of the ‘Meilleur Ouvrier de France’ (best craftsman in France) competition will give two demonstrations in a duet with the young and talented Slovenian chef, Biné Volčič.
Biné Volcic graduated from Le Cordon Bleu Paris school in 2007 and has since developed his talents in several Michelin-starred restaurants. He is currently Chef at the restaurant Gourmet Promenada in the town of Bled and Director of l’Atelier Kitch’n’Art.
Mr. André Cointreau, President of Le Cordon Bleu International, states “we look forward to bringing our know-how of French culinary techniques in order to highlight the importance of this country’s produce. Our mission is to train culinary and hospitality leaders of tomorrow”.

Le Cordon Bleu sodeluje na 4. Festivalu kulinarike v Ljubljani
Na povabilo Bineta Volčiča, slovenskega diplomanta kulinarične šole Le Cordon Bleu v Parizu in vodje Kulinaričnega ateljeja Kitch'n'Art, se bo na letošnjem 4. Festivalu kulinarike prvič v Sloveniji predstavila vodilna svetovna šola francoske gastronomije.

Festival kulinarike letos predstavlja slovenske kuharje in gostince z jasno avtorsko noto, ki ambiciozno nadgrajujejo tradicionalne slovenske okuse z modernimi kulinaričnimi pristopi, izpostavlja pa tudi pomen kulinaričnega izobraževanja, ki daje strasti do kuhanja trdne strokovne temelje. Festival bo organiziran v dveh delih, ki se bosta odvijala v istem prostoru: v Galeriji okusa je 12 razstavnih prostorov, kjer bodo sodelujoči kuharji in gostinske šole pripravljali svoje avtorske jedi za degustacijo v obliki grižljajev, v Gledališču okusa pa bodo na odru 4 navdušujoče kuharske predstave z degustacijo vsak dan, med njimi bo francoski kulinarični inštitut Le Cordon Bleu Paris pripravil dve demonstracijski uri »po šolsko«.

Chef Philippe Clergue, ki je del elitnega tima profesorjev Le Cordon Bleu Paris od leta 2006 in letošnji finalist tekmovanja »Najboljši obrtnik Francije«, bo tako pred očmi vseh prisotnih pripravil dva recepta. Na meniju: srnin file z brinom, kostanj v začinjenem vinu, zelenjavna »chartreuse«, krompirjev pire s karameliziranimi jabolki in čips iz vijoličnega krompirja ter file morskega lista s potočnimi raki in sezonsko zelenjavo, kuhano v »cocotte«.

Le Cordon Bleu

Le Cordon Bleu se ponaša z več kot stoletno tradicijo poučevanja francoske gastronomije. Dandanes so s 40 šolami prisotni v 20 državah po svetu in delujejo tudi na področju hotelirstva ter managementa v turizmu. Na leto sprejmejo kar 20 000 študentov več kot 70 različnih narodnosti. Njihov obisk na novembrskem Festivalu kulinarike v Ljubljani je prav gotovo velika čast in priložnost tako za ljubitelje vsega, kar »diši« po kuhinji, kot posledično za rast slovenske kulinarike. Pomeni tudi začetek francosko-slovenskega sodelovanja na tem področju.
