Classic Cycles

Le Cordon Bleu programs introduce the students to the principles and basic techniques of cuisine and pâtisserie, and show them the contemporary trends of culinary arts.

The classic programs include the Grand Diplôme®, the most renowned Le Cordon Bleu program worldwide, which comprises both the Diploma in Culinary Arts and the Diploma in Pâtisserie. Depending on the students’ interests and needs, they may either take both courses, hence attaining Le Grand Diplôme, or choose just one of the two Diplomas which comprise it. They may also take the courses that compose each Diploma individually, always starting with the basic level and having the opportunity to finish the rest of the levels in the future.

 

 

Spanish Cuisine Programs

Le Cordon Bleu Madrid has designed a program in which the student will learn the origins of the gastronomic tradition and the front line of a cuisine style that today is considered as the pioneer in innovation and investigation.
This program, taught exclusively in English, guides the student through the techniques, recipes and raw materials, fundamentals of the Spanish cuisine.

High Bakery Diploma

This program proposes a journey through the essential raw materials and techniques of high bakery and fine pastry. A six month Diploma made of two certificates: Basic High Bakey and Advanced High Bakery. Each one of them covers 120 hours taught in the bakery of our School.

Short courses

These courses suit students who are interested in being in contact with the world of cuisine and pâtisserie. They cover a wide range of topics such as culinary arts and gastronomy and are practical courses which are taken over one or a few days.

Degrees, postgraduate studies and research programs

Le Cordon Bleu Madrid and Francisco de Vitoria University offers official university programs jointly. Gastronomy is part of the cultural expression of different peoples and, as such, it has become a subject of study in many universities around the world.  Those interested in gaining training in disciplines such as restaurant management, gastronomy and hotel management are now able to do so in Madrid thanks to two leading institutions.
