About the Program:

The intensive session of Basic Cuisine guides students through the same foundation of Cuisine skills and techniques as found in our Cuisine de Base program. The full session and examination take 5 weeks to complete, as compared to the regular 11 weeks.

From day one, you will be introduced to knife handling, classic cuts and basic stocks. As the term progresses, techniques are layered upon one another as they become more complex and menu-oriented, incorporating elements such as organization, preparation, balance and timing. Le Cordon Bleu emphasizes the appreciation of French technique at the service of world cuisine.

Who should apply:

Geared toward students with little time but plenty of energy, this intensive session is ideal for those who are not able to take time away from work or other responsibilities to attend the Cuisine de Base, or those who wish to expedite their transition to Cuisine Intermédiaire.

2014 Session Dates: The intensive Basic Cuisine session will commence on August 22 to September 26, 2014.
